
I have previously been employed in many of the top establishments in the region and nationwide. Working in Michelin starred establishment to country pubs. I bring to my position vast experience of fine dinning and culinary skills to stimulate young taste buds. Hopefully educating the pupils not to expect the junk food offered to them in many catering establishments. The food my team and I are offering is of the highest quality and a pleasure to cook. We are fortunate to be cooking for customers from the rural areas as they appreciate home cooking more than other regions, this is the type of food they are used to. I have given the kitchen staff confidence in the food produced and they are happy to serve the customers. The kitchen staff also take away the skills they have learned at work and use them in their home life, which benefits more than the school community. They have a positive attitude to the changes and any further developments. We will cater for all food groups (vegetarians, Vegans, celiac, etc) apart from the junk food addicts. I have a great team working with me and I am very privileged to have such a great brigade. It as also been an honour to have won the CGC Cost Sector Chef of the Year Award 2007, an honour in which wouldn’t have been achieved if I hadn’t had the team I have got behind me. The new legislation that has been imposed onto the catering of schools nationally may seem daunting to many but we have excelled well in advanced of their introduction in producing high quality produce within the national framework.
